About Mei
As a dedicated Nutrition and Health Specialist with a degree in Exercise Physiology and Nutrition from the University of Houston–Clear Lake (UHCL), I bring both academic knowledge and real-life passion to my teaching practice. My commitment to promoting healthy living stems from a lifelong interest in fitness, nutrition, and overall well-being, interest that has grown into a fulfilling career focused on educating and empowering others to make informed lifestyle choices. I strive to make complex health and nutrition concepts accessible and engaging for my students, regardless of their background or experience. My goal is to foster lasting, positive change by inspiring a deeper understanding of how nutrition, exercise, and daily habits affect long-term health. Outside the classroom, I am an active individual who values time with family, enjoys working out, and has a deep appreciation for food, not just as fuel, but as a source of joy and connection. As a mother, I’ve found joy (and challenges!) in developing nutritious, creative meals for my one-year-old daughter. This personal experience has sharpened my creativity and further deepened my empathy for those navigating nutrition in the context of real-life demands. Through my work, I hope to continue inspiring others to live healthier, more balanced lives. One lesson, one meal, and one meaningful choice at a time.

As a Health and Nutrition Specialist, my goal is to educate, empower, and guide my students toward making informed, sustainable health choices. I use a combination of evidence-based strategies and personalized teaching techniques to ensure students not only understand the science behind health and nutrition but are also motivated to apply it in their daily lives.
I prioritize engagement through hands-on activities such as:
- Meal planning workshops
- Nutrition label reading exercises
- Cooking demonstrations and healthy recipe development
- Case studies and real-life scenarios
These help students apply theoretical knowledge to practical, everyday situations.
I stay updated with nutritional science and health guidelines in order to deliver accurate and up-to-date information and resources for continued learning.
As a wellness advocate, I strongly believe in a holistic approach: stress management, sleep hygiene, physical activity, emotional eating and body image, all these factors work together and affect our health.
