About Maria
I am your facilitator: My name is María Gangotena, and I hold a Ph.D. in Education from St. Francis Xavier University. • I also hold a Master's degree in Human Nutrition. I am a specialist in Nutrition Education and Community Nutrition projects; additionally, I have a Master's degree in e-learning. • I was trained in Mindful Eating by the teachers Drs. Jan Chozen Bays and Char Wilkins, creators of the Mindful Eating/Conscious Living program: I received training for health professionals in Mindful Eating/Conscious Living from the University of San Diego, California. I attended advanced training for health professionals in Belgium, given by the Centre for Mindful Eating and Nutrition Europe. Recently, I recertified my skills through the "Mindful Eating Certificate" from The Center for Mindful Eating, in the USA. • I have facilitated more than 25 experiential workshops. I am the founder of Instituto Nutrición Consciente, an online professional school for Latin American health professionals. • I have developed my career as a university professor, Academic Coordinator, and Director of prestigious Nutrition schools in Ecuador. • I am a community researcher and consultant for UNICEF; FAO; WFP and PAHO, and I was an advisor in the Ministry of Public Health of Ecuador, in the Nutrition Unit.

María del Carmen is an excellent teacher. I participated in her MindfulEating workshops and I really liked the way she combines theory with practical experience.
Her teaching style is integrative and empathetic. She promotes reflection and analysis of the topics. I found it very interesting that she encourages the participation of all students, so the class is interactive and has diverse visions and perspectives.
Something I admire is her concern for the students, not only academically, but as integral human beings. As this program was developed during the pandemic, she included in the workshops, some mindfulness meditation sessions, which allowed us to advance in MindfulEating topics and, at the same time, to manage our emotions and be aware of how we were processing this situation. I’ve have known Maria professionally for more that 10 years, time in which she has been a university professor, independent teacher, as well as a community instructor, always able to share her knowledge and experience in an effective way. I have been able to see how people that were not receptive at the beginning of a session, totally changed their mind by the end of it.
