About Johnathan
I am an avid food lover who spends just as much time reading about dishes and food history as I do working in kitchens and doing private events. I stepped down as the executive chef of 1815 Tavern last year to help my family open a little bar but COVID put a hold on that. So here I am trying keep things interesting for myself while also trying to pay the bills and hopefully help my parents open their bar.
Before COVID though I was running a private supper club and cooking in private residences on the side. Even more so now than ever I strive to provide a fun and comforting experience for people in the safty of their own home. You can find me running bake sales of cottage foods, doing catering or private dining events, and of course, teaching cooking classes!
Being self taught with an affinity for finer things I specialize in upscale downhome cooking: Modern and Historical American food with some Italian, Asain, and Mediterranean cuisines thrown in built on French techniques. I bring all that with me and try my best to not only show you how to make a Sunday red sauce your grandma would be jealous of, but to teach you why it tastes so good.
I've always been one of the designated guys on the line to teach new cooks and after I got my sous chef title it literally was my job to make sure everyone was up to the task. It wasnt much of a jump after that offer to go and teach people in their homes.
Before I was old enough to work I was the oldest sibling in a working class home, so it just happened that I made dinner most nights. I always say 'Better Homes and Gardens' was my first chef. Besides all the book reading, I have worked at various bars and restaurants over the past 7 years to include a few years at Downtown 140 and as the sous chef and even the executive chef of 1815 Tavern for a short time. For the past 2 years I have been running a private supper club, and over the past year have been getting my personal chef business off the ground.

Everyone has a different amount of knowledge of food, skills and cuisines. I like to set aside a small amount of time before we even have a class to talk and listen to find out what a new student wants to learn, be it in one class or over a series of classes. Not only is it needed to understand what someone knows, not everyone wants to know every little detail of why a dish is the way it is. I then take all that and make a classes schedule with key points I feel we ought to cover.
I've worked with kids, high schoolers and adults. So theres been a big gap between a few of my students in what they knew, how much I couod teach and more importantly what they were lookingnto get out of the class.
With food you can never really master everything. Its always expanding and changing and trends come and go within all the different cuisines. Find a teacher who can teach you what you are looking for, just because they don't know one cuisine or style of cooking doesn't mean they are a bad teacher. It needs to be a good match or you may not like their approach to cooking or the food. If your truely open to learning and seeing things differently though, go with a chef who has seen a few things or who might really force you to learn something new.
Though I wasnt hired for a cooking class for this specific event, I do try to be engaging and informative when I get hired to cook private brunch or dinners for people.
I was asked to make a brunch for Easter for a family I routinely work for but at one of their parents home. I try to make people feel comfortable in their own home because sometimes its weird to have someone else doing working a job essentially in your kitchen. It didnt take longnfor us to strike up conversations about how to prepare that or that, how I had made the fresh English muffins, what I had on the stove or in the oven and so on. We talked and I showcases what I was doing and why and explain how to fix soemthing with little time. I always those kinds of days, it so much fun for me. Its like a long format version of watching a cooking show on TV but you get to really see it from start to finish in one go.

Details
I charge $35/hr and book classes for 1 hour minimums. I usually offer to buy the food and bring along any products we may need for the class that I already keep for work purposes. I follow dietary restrictions or special requests to shop wherever someone prefers, I only ask for students to cover the food costs of things I need to buy. What I already have and the time spent shopping come at not extra costs.
